Chili:'phrik' in Thai (พริก), not that exotic anymore, but each country that uses chilis has a national culture surrounding them. The Thais have two favourite varieties, with what could only be termed hilarious names. Thai nomenaclature refers to the size of the chilis, one called 'key noch' (bird shit) and one called 'key ngu' (mouse shit)! Both are supplied in red and green stages and for a rule of thumb assume the reds are hotter. Greens are also not so noticeable in a dish, which means they are not shouting as loud as a red chili.
